Virtuous: "tasty" research
A "virtual language" to predict the organoleptic properties of a food from its chemical composition or colour; intelligent software capable of reconstructing taste and perception thanks to multidisciplinary technologies such as artificial intelligence, data mining, bioinformatics, complex models at the molecular or cellular level.
This is "Virtuous" - Virtual tongue to predict the organoleptic profile of Mediterranean ingredients - a Marie Curie European project coordinated by the Politecnico di Torino with the collaboration of Italy, Greece, Spain and Switzerland, in which SUPSI is participating with the Dalle Molle Institute for Artificial Intelligence (IDSIA) USI-SUPSI .
As well as making it possible to understand the taste of a food even before tasting it or even producing it, 'Virtuous' could be used in the agri-food industry in the context of, for example, quality control or the fight against counterfeiting.
The focus of the research, in the first phase, is oil and wine, two typical foods of the Mediterranean diet.
'Virtuous' is part of the more than 200 research projects active at the DTI in the field of technologies and industrial applications carried out in a network with local and international partners.
